Ingredients
5 cups 8th Continent Light Vanilla Soymilk (or another light vanilla soymilk**)1 small (4-serving) package Je ll-O Sugar Free Fat Free Instant Pudding mix, Vanilla6 no-calorie sweetener packets (like Splenda)1 tsp. rum extract or imitation rum extract1/2 tsp. ground nutmeg
Directions
In a blender, combine all ingredients and blend on high until mixed thoroughly. Refrigerate for a few hours to allow it to thicken. Makes five 1-cup servings!

HG Alternative! For some "over 21" eggnog, add 5 ounces of rum to the recipe. With 153 calories and a POINTS® value of 3* per serving, that's WAY better than an ordinary eggnog cocktail!

    This was horrible! The kids and I are used to soy milk (they even prefer choc. soy over cow's choc.) but the soy taste was overpowering and gross in this. We had to throw it all out. - 11/18/08

    I tried this with soymilk and almond milk, but I found the soy/almond taste too strong. It worked great with skim milk! (Pudding mix has milk derivatives in it anyway.)
    Note, do not just shake it up; the pudding mix won't dissolve evenly and the texture won't be nice. Use a mixer or blender. - 1/5/13

    I have made this several times and it is great! I love the fact that I get the taste of eggnog without the huge number of calories in the product sold in the stores. The pudding gives it the texture and the nutmeg is delicious. I rarely comment on recipes, but I had to on this one! - 1/29/11

    I'll use a vegan friendly pudding brand, vanilla almond milk (super low cal and more neutral tasting than soy) and stevia. I've also seen nogs that use frozen banana rather than pudding. Worth a shot, IMO. Fruit is always better than chemicals. :) - 12/11/10

    This is an excellent substitute for regular eggnog. For weight watchers, this is 1 point with a 6 oz serving. Excellent taste, but you must be OK with soya. - 12/5/10

    I'm the only one in my family who likes eggnog so I don't feel like I can buy even the "light" dairy eggnog because even that is way too high in calores/carbs/fat. This was delicious and I will definitly be making it again! I used regular 8th continent vanilla as I couldn't find the light van. soy. - 11/12/10

    Pretty good! Added some rum, perhaps a bit too much as the taste was overpowering... smelled just like real eggnog prior to adding rum! Gonna let it sit in the fridge for a bit longer to thicken up some more. - 11/25/09

    I forgot to add the Splenda and subsituted tequila for rum extract. I think I'll choose not to venture with tequila next time but this was still fantastic! - 12/2/08
