Smoky bacon tomato soup

Ingredients
1 tsp olive oil½ onion, chopped2 garlic cloves, chopped4 slices bacon, chopped½ pint chicken or vegetable stock2 tomatoes, chopped2 tbsp tomato purée
Directions
1.Heat the oil in a pan and gently cook the onion and garlic for 3-4 minutes or until softened.

2.Add the bacon and cook for a further three minutes.

3.Pour over the chicken or vegetable stock and add the tomatoes and purée. Cook for five minutes.

4.With a hand blender, blend the soup until it's smooth.

5.Serve warm.
