Twice Baked Stuffed Potato

Ingredients
4 whole russet potatoes, with skin1 cup shredded cheddar cheese1 whole diced green onion1/2 cup sour cream2 tablespoons cream cheese1 teaspoon salt1 teaspoon pepper
Directions
Serving Size: makes 4 1/2 potato servings

Cook potatoes for 5 minutes per each potato in microwave,equals 20 minutes for 4 potatoes

Let potatoes cool slightly, to handle.
Slice the potatoes in half.
Carefully scoop out the potato, making sure not to tear or break the potato skin.

Pre-heat regular oven to 375 degree F

In a bowl combine sour cream , cream cheese & potatoes. Dice the green onion.
Use half of the green onion in the potato mixture, combine the salt & pepper.

Take the warm potato mixture and pile it back into the 8 halved potato skins.

Bake in regular oven- 10 minutes
Remove from oven and sprinkle tops of potato with the remaining green onion and shredded cheddar cheese.
