Pepper & Onion Frittata

Ingredients
2 tbsp Canola oil1/4 onion1 c bell pepper1 jalapeno4 eggs1 oz grated parmesan
Directions
Saute vegetables in oil. Remove, but leave oil in pan. Beat eggs with parmesan and pour in oven safe skillet. Cook on stove 1 minute. Add vegetables and bake at 375 for about 8 minutes.
