6 tbsp extra virgin olive oil2 medium onions diced1 red bell pepper diced1 green bell pepper diced4 cloves of garlic minced4 tbsp tomato puree2 tsp lemon juice2 pinches of rosemary2 coriander leaves
boil 2 cups of vegetable broth then take off stove top and add couscous let it stand for 5 minutes covered.
In another pan saute diced peppers, garlic, onions, with olive oil, lemon juice, tomato puree and add 2 pinches of rosemary, and 2 coriander leaves, salt and pepper to taste.
then combine the mixture with the couscous and enjoy!
