Corsican Beef Stew with Macaroni

Ingredients
6 garlic cloves2 pounds stewing beef cut into 2-inch cubes4 ounces bacon cut into strips3 tablespoons olive oil2 onions, sliced2 tablespoons tomato sauce1 tablespoon tomato pastepinch of ground cinnamonsprig of rosemary1 bay leaf2 cups large macaronisalt and pepper to taste
Directions
Mince garlic. Cut bacon. Cover the cut up beef in 1/2 the garlic and all of the bacon and season w/ salt and pepper. Marinate all day.

1. Heat oil in a heavy pan. Add half the beef and brown well on all sides. Transfer to a plate. Repeat w/ the remaining half. Add the sliced onions to the pan and cook until lightly browned. Add the remaining minced garlic to the onions w/ the meat.
2. Stir in the white wine, tomato sauce, tomato paste, cinnamon, rosemary, bay leaf and add salt & pepper. Cook gently for about 30 minutes, stirring often. Add 1 box of beef stock. Bring to a boil, cover and simmer very gently for 3 hours, until the meat is very tender.
3. Cook the macaroni. Drain. Mix w/ the stew and serve! Delicious!!!
