Roasted Veggie Hummus Low fat, Low sodium

Ingredients
4 cups garbanzo beans (cooked) use dry beans to make 4 cups. Canned beans have too much sodium3 garlic bulbs4 med onions whole4 baby carrots1 orange bell pepper1 cup butternut squash1 Tlbs olive oil2/3 cup soy milk2 tbls Panang Curry Paste (or your prefered red curry paste)
Directions
Boil your beans until they are done. While they are cooking:
peel onions, slice squash into large pieces, core pepper, peel outer layer from garlic.. place all veggies on cookie sheet and bake at 400 for 30 minutes.
When beans are done and fairly cool add to food processor, add the rest of the ingredients and blend until smooth in texture.

Makes 6 cups
