1 cup orange peel4 tbl unsalted room temp butter1/4 cup oj3/4 cup granulated sugar(you could use splenta or xylitol)2 extra large eggspinch of salt
combine sugar and peel of two large oranges in a food processor untill orange peel is the size of sugar. Put room temp butter in a stand mixer and add sugar/orange peel mixture. Comine on low speed untill fluffy. Add eggs one at a time and follow with orange juice. Transfer mixture to saucepan and heat on low-med untill mixture reaches 175 on a candy therm or mixture starts thicken slightly and sticks to the spoon. Take off heat and let cool and refrigerate. Serve with fresh strawberries, ginger snaps, on muffins, add a dash to yogurt. You can also add pumpkin pie spice and serve for the holidays.
