anise zucchini bread/muffins

Ingredients
Directions
2 cups flour2 cups granulated sugar1 teaspoon sea salt3 cups grated zucchini ( if using frozen - thaw and drain )2 teaspoons baking soda1/4 teaspoon baking powder3 teaspoons cinnamon1 teaspoon vanilla extract1 teaspoon pure anise extract1/2 cup oil ( low fat? substitute with 1 1/2 cup applesauce )3 eggs1/2 cup walnuts
Preheat oven 350 degrees
In large bowl, combine dry ingredients.
Mix in all wet ingredients.
Place in 30 lined muffin tins.
Bake for 25 minutes or until toothpick inserted in center comes out clean.
If you would rather make 2 loaves - lightly spray the pans with oil and sprinkle bottoms lightly with granulated sugar. Then add dough and bake 45 minutes to 1 hour. Cool in pans 10 minutes then remove to a wire rack to finish cooling.
