Maple-Mashed Sweet Potatoes

Ingredients
1 pound sweet potatoes, peeled and cut into 2-inch chunks2 medium carrots, thinly sliced2 tablespoons maple syrupPinch of ground nutmegFreshly ground black pepper
Directions
Place the sweet potatoes and carrots in a medium saucepan. Add 1-inch water, cover, and bring to a boil over high heat. Reduce the heat to medium and simmer for 9 to 10 minutes, or until the vegetables are very tender.

Drain in a colander and return to the saucepan. Mash until smooth. Stir in the maple syrup and nutmeg and pepper to taste

    This dish is wonderful and it's not smothered in tons of butter to make it better. Sweet potatoes are so moist on their own you don't need the butter or the calories. My husband and I love it and it goes with chicken, steak, ham, and pork. - 2/24/09

    Terrific recipe! There was none left when I prepared it for our last church dinner. I used an electric mixer to fully combine the mashed sweet potatoes and carrots. I added a pinch of cinnamon and, also, I toasted chopped pecans in maple syrup to top the dish. I'll prepare this again - 12/18/09
