Potato-Turnip Mash with Crispy Fried Shallots

Ingredients
3 lbs. boiling potatoes (red or white), peeled and cut into chunks1 lb. turnip, peeled and cut into chunks1 cup oil olive, extra virgin4 large shallots, thinly sliced (1 cup)Salt and pepper
Directions
In a large pot of boiling, salted water, combine the potatoes and turnips (1 lb). Cover; cook until tender, 15 minutes. Drain; reserve 1 cup cooking liquid.

Meanwhile, in small saucepan, heat the olive oil over medium heat. Working in batches, add the shallots; cook until crisp, 3-4 minutes. Drain on paper towels. Strain the cooking oil and reserve.

Mash the veggies with the reserved cooking liquid and 5 tbsp. of the shallot oil. Season with 1 tsp. salt and 1/4 tsp. pepper. Top individual servings with the fried shallots.
