Shrimp Scampi

Ingredients
1 lb. frozen shrimp, raw (peeled and deveined)2 tbsp olive oil2 cloves garlic, minced1/2 onion, chopped1 cup chicken broth4 tbsp light margarinechopped fresh parsley1 tbsp fresh oreganoground pepper to taste
Directions
Defrost shrimp, if necessary.
Heat olive oil in skillet and saute onion and garlic for 2-3 minutes over medium heat.
Pour chicken broth into pan and reduce heat to simmer for 5 minutes.
Add shrimp and heat for 2-3 minutes or until shrimp is cooked and pink (do not overcook). Stir in the butter, oregano and parsley. Add salt and pepper for flavor.
Serve with your favorite rice or pasta and grated parmesan cheese.
