D's Crab Melts

Ingredients
4.25 oz canned white crab meat (1 can Bumble Bee)1 tbsp mayonnaise w/ olive oildash of each to taste, black pepper, curry powder, cayenne or red pepper4 slices gluten-free bread4 large slices colby jack cheese
Directions
Drain the crab meat and stir together with mayonnaise, pepper and curry.

Toast the bread slices in an electric toaster - about half as dark as normal.

Pre-heat the oven broiler on high, with top rack 2 spots down.

Place slices of toast on a cookie sheet. Divide the crab mixture in 4 and spread on toast. Top each piece of toast with a slice of cheese.

Place the sheet in the oven broiler till cheese just starts to brown on the edges.

Let cool for a few minutes before eating.
