Chicken and Flour Tortilla Dumplings

Ingredients
2-3 lbs. of chicken cut upsalt and pepper to taste1 cup of milk2 Tablespoons margarine1 pkg. tortillas ( use low-carb tortillas for a low carb version)
Directions
Place chicken in a heavy sauce pan. Add 6 cups of water, stir in salt and pepper. Bring to a boil, cover reduce heat, and simmer 1 hour or until meat falls off bones. Remove chicken from broth; let cool. Remove chicken from bones and dice.Add 1 cup milk and margarine to broth; if you want a thicker sauce, like gravy, stir 2 tablespoons of flour into 1/4 cup of milk until smooth, then stir into simmering broth and stir until thickened. For dumplings, cut tortillas into 2 inch squares. I drop mine into a bowl or zip-lock bag with flour and shake until coated. Gradually drop tortilla dumplings, one at a time, into boiling broth mixture. Cover, reduce heat and boil gently for 10-15 minutes, or until dumplings are cooked. Stir occasionally to prevent sticking. Stir in chicken and heat through.
