Spicy Lemon-Lime Chicken Fajita Filling

* 4 large OR 5 small Boneless, Skinless Chicken Breast halves, cut into chunks [Mine weighed: 625g.]* 1/2 cup Lemon OR Lime juice [I usually squeeze a bit of each, 1/4 cup lemon and 1/4 cup lime - hence the recipe name!]* 2 tbsp. Kikkoman Soy Sauce* 2 tbsp. Kikkoman Teriyaki Sauce* 2 tbsp. Water* 1/2 tsp. Oregano* 1 - 4 cloves Garlic, crushed [Adjust to personal taste. I used 4.]* 1 small Red Onion, chopped [Mine weighed: 105g.]* 1 Green Pepper, sliced thinly into strips [Mine weighed: 240g.]* 1 Red Pepper, sliced into thin strips [Mine weighed: 180g.]* 1/4 TO 1 tsp. Red Pepper Flakes, optional [Adjust to personal taste. I use 1/4 for mild, and 1/2 to 3/4 for medium heat.]* 1 tsp. Olive Oil, reserved
1. Place chicken chunks, combined spices, onion, and garlic in a glass dish. Cover with plastic wrap, and marinade for 4 hours MAX. (1 hour is sufficient.)
2. Pour 1 tsp. olive oil into a large skillet, and heat over medium heat. Drain chicken (reserve the garlic and onions!), and add to skillet.
3. Cook chicken over medium-high heat.
4. Add sliced peppers, and cook until meat is done and peppers are soft.
5. Serve on warmed whole wheat (or other!) tortillas. Serve with salsa, sour cream, shredded cheese, olives, etc. (((NOT included in nutritional information --- simply a suggested serving idea! The nutritional information is for the chicken fajita filling ONLY!)))
6. Makes five 1-cup 'servings'. Perfect on a large, meal-sized tortilla. If you prefer the small tortillas, use 1/2 cup of filling and enter into the tracker as "0.5" servings. Enjoy! :)
***NOTE: Left-overs will also taste good re-heated the next day, served over a small bed (perhaps 1/2 - 3/4 cup) of brown rice! :)
