Date and Carrot Loaf

100g butter, chopped1/2 cup packed brown sugar1 cup chopped pitted dates1 teaspoon mixed spice1 teaspoon bicarb soda2 eggs, lightly beaten1 1/2 cups self-raising flour50g pepitas50g sunflower seed kernels50g pecans chopped1/2 cup grated carrot
Preheat oven to 180 C. Grease and line loaf tin. Place butter, sugar, dates, spice and 1 cup cold water into medium saucepan, over medium heat. Cook, stirring, for 4 minutes or until butter has melted and sugar has dissolved. Bring to the boil. Remove from heat. Stir in bicarb. Cool for 20 minutes. Stir in eggs, Add flour, seeds, nuts and carrot. Stir to combine. Pour into prepared tin and bake for 50minutes. Cool in pan for 10 minutes. Turn onto wire rack to cool completely.
