Vegetable Quiche

Ingredients
1/4 Cup onion - Diced1/2 Sweet Bell Pepper - Diced1/3 Cup Broccoli - chopped3 tsp.of minced garlic3 Cups fresh spinach1 tomato - sliced1 Cup egg substitute or 4 eggs3/4 Cup of non-fat milk1/4 cup shredded cheddar cheese - fat freeDash Salt & Pepper1/4 tsp of Parsley1/4 tsp of Oregano
Directions
Preheat oven to 400

Spray a pie pan with cooking spray, set aside.

In a skillet, add onion, garlic, pepper, and broccoli. Cook until tender, about 7 minutes. Add spinach and cook until wilted.

In a bowl, add egg, milk, cheese and seasonings and wisk together.

Add cooked vegetables to egg mixture. Stir. Pour into a pie dish and top with sliced tomatoes.

Bake in oven for 25 minutes, until egg mixture is cooked.
