1 lb dry great northern beans, rinsed and picked over4 C chicken broth (I used Swanson "33% less sodium") 2 C yellow onion, chopped1 C celery, diced3 large garlic cloves2 tsp ground cumin1/2 tsp ground oregano1 tsp dried ground corriander1/4 tsp ground cloves1 (4oz) can chopped green chiles2 pounds boneless, skinless, chicken or turkey breast, grilled and cubed
Place beans in a heavy pot and add enough water to cover beans by 2 inches. Bring to a boil. Let stand covered for 1 hour. Drain and rinse. Discard liquid.
Place beans in crock pot. Add chicken broth, onion, celery & spices. Cover and cook on low for 6-7 hours until beans are not quite tender. Add chiles and chicken. Cook for another hour, until beans are desired tenderness.
