4 oz. Hatch Green Chili (canned)16 oz. Frozen Spinach 3.50 cup Diced Tomatoes in Juice (canned)0.75 cup fresh Celery, chopped1/2 cup fresh purple onion, chopped3/4 cup fresh Leek 40 oz (2.5 lbs) Boneless Skinless Chicken Thighs, cubed5 cup Organic Chicken Broth 1 cup Mushrooms Pieces and Stems (canned)
Combine all ingredients in 5-6 quart crock pot. Cook 6-7 hours on high; turn to low for final hour. Stir thoroughly. and serve.
