Matchmeat - I used mostly sweet Italian sausage flavor with some ground beef - I used one packageCarrots, celery, onion - chop in food processor to get really small pieces - texture feels like more beef2 cloves garlicMushrooms - again chopped in food processor small1 can black beans - didn't rinse1 can chili beans2 can Rotel1 can diced tomatosChili powder to tastecumin to tastechipotle cubeOptional toppings/ addinsHeavy creamCottage cheeseReduced fat cheddar
Brown matchmeat, saute veggies in olive oil - add rest and simmer. I rinse the cans with some water to thin the chili. I also added water while browning the matchmeat - it was sticking to my cast iron skillet and again it would just thin the chili - I like a little juice.
At the end I added a little heavy cream because I had it and it just adds a little smoothness to chili
