3.5 oz small cooked, peeled, and detailed/deveined shrimp1 medium tomatojuice of 1 lemoncilantro to taste chopped fresh garlic to tastehandful of chopped raw white onions
In a small saucepan, begin heating the shrimp and most of the garlic and onions (set a bit of each aside) on medium low heat. While that is cooking, take your tomato and make a round cut near the top so you can scoop out and save the insides. It should look like a little cup. Add the insides of the tomato, the garlic, the onions, most of the cilantro, and the lemon juice to a small blender (like a Magic Bullet) and blend. Add the mixture to the sauce pan for just a moment and mix well. Pour everything into the tomato and garnish with cilantro. Serve warm.
