High Protein - Low Carb Chocolate Chip Cookie

Flour, white, 2 1/2 cupsGranulated Sugar, 3/4 cup Brown Sugar, 3/4 cupOld Fashioned Quaker Oats - uncooked 3 cupsWalnuts, 2 cups choppedChocolate Chips 2 cupsMargarine 1 cup (2 sticks)Salt, 1 tspBaking Soda, 1 tspWhey protein isolate, (9 grams per Tablespoon) 1 cupvanilla flavoring, 1 tspEggs, 3
Heat oven to 350 degrees (325 for convection bake)
Cream sugars and margarine, add vanilla and eggs and beat till smooth. Add protein powder first, then salt, baking powder and flour, mixing until smooth. Stir in chocolate chips, walnuts and oatmeal.
Use a 1/4 measuring cup to portion the dough - flatten slightly because these babies don't "melt" down on their own. They will be about 3" across and 1/2" high.
Bake 8 -10 minutes or until golden brown. Cool on a wire rack. and store in an air tight container or bag.
Serving Size: makes 48 cookies (1/4 cup each)
