Rachel's Lentil Soup

Ingredients
1 onion1.4 cup olive oil2 carrots2 stalks cerery2 cloves garlic1 tsp dried oregano1 bay leaf1 tsp dried basil1 (14 oz.) can crushed tomatoes2 cups lentils1/2 cup spinich
Directions
In large soup opt heat oil, add onions carrots and celery. cook and stir until onion is tender. Sdd garlic, bay leaf, oregano and basil: cook for two min. Stir in lentils add water and tomatoes. Bring to a boil. Reduce heat and simmer for at least one hour. When ready to serve add 1/2 cup spinach and cook until wilted.
