Fish Cakes

Ingredients
1.5 lbs tilapia4 tbs Olive Oil1 Cup chopped scallions (green onions)3 Tbs parsley2 Tbs flour (1/2 white and 1/2 wheat)2 garlic cloves minced1 tbs lemon peel grated2 cups bread crumbs1 large eggdash of salt and pepper
Directions
Cook fish in skilltet with salt, pepper and 2 tbs of olive oil until opaque (about 4 min) Remove from skillet and flake into large bowl. Add onions, parsley, flour, garlic, and lemon peel. Mix in 1 cup of bread crumbs. Add beaten egg and mix together. Shape into 6 cakes. Dip cakes in remaining 1 cup of bread crumbs coating on all sides. Add remaining 2 tbs of olive oil to pan and fry cakes for about 5 minutes a side until lightly browned and heated through.
