16 cups of water3/4 cup of washed mung beans1 1/2 cups of Basmati riceVeggies of your choice2 tablespoons oil1 (or more) chopped onion6 - 9 cloves of garlic1 chili pepper1 teaspoon peeled and chopped ginger room1/2 teaspoon turmeric1/2 teaspoon garam masala1/4 teaspoon ground black pepper1/4 teaspoon red chili flakesWhole bunch of cilantroNon-fat yogurt
Boil the water. Add mung beans and ten minutes later, lower the heat to a simmer and add rice. Throw in any vegetables you have available, especially green vegetables. Kale or collard greens work well with carrots and celery. Cook beans, rice and veggies for 30 - 40 minutes. Heat oil in a pan and fry onion, then chili pepper, then garlic. Finally when those are almost done, add the spices and fry for one minute. Add spices to kitchari. Add chopped raw cilantro. Salt to taste. Spoon yogurt on top.
