Steve's Best Ever Beef Jerky

3 1/4 lb. Bottom Round Beef Roast(makes about 2 lbs. dried jerky)7 Tbsp. Red Vinegar (or Balsamic?)3 1/2 Tbsp Lemon Juice12 1/4 Tbsp Teriyaki3 1/2 Tbsp Ketchup7 tsp Dark Brown Sugar7 Tbsp Maple Syrup (or Trader Joe's Maple Agave)2 5/8 Tbsp Onion Flakes3 1/2 tsp Garlic Powder3 1/2 tsp Garlic, chopped or pressed1 3/4 tsp Kosher Salt1 3/4 tsp Pepper (or White Pepper)1 3/4 Tbsp Soy Sauce5 1/4 Tbsp Steak Sauce or Russell's BBQ Sauce3 1/2 tsp Liquid Smoke
Mix all ingredients except meat in a large bowl. Slice meat very thin with a meat slicer, removing any fat or gristle. Place meat in marinade and mix well with hands. Let sit for a bit to let flavor soak in. Spread meat slices on dehydrator trays. Set dehydrator to 160-degrees. Jerky will take about 7 hours, but check every hour or so and remove any pieces that are done, and rearrange trays as needed.
One 3 1/4 lb. roast will yield approx. 2 lb. of dried jerky.

This is an outstanding recipe. I have used it several times now. I did add a bit of wasabi paste to give it a bit of a kick. - 3/20/15
