Whole Wheat Penne with Caramelized Onion and Mushroom Cream Sauce

Ingredients
1 Whole Onion, cut into strips2 tbsp Olive Oil2 cups Fresh Mushrooms, sliced (I like a combo of Shiitake and Baby Bella)1.25 c. Fat Free Half and Half1 clove Garlic, minced12 oz. Whole Wheat penne2 cups fresh Baby Spinach1 tbsp. Balsamic VinegarSalt, to tasteBlack pepper, to tasteRed Pepper Flakes, to taste
Directions
1. In a large saucepan, cook onion and olive oil on medium-low heat. Continue cooking for 30-40 minutes, adding a little water to prevent burning, if necessary.

2. When onions are golden brown and sticky, turn heat to medium and add mushrooms and 2 tbsp water. Add salt to taste and saute until mushrooms are soft.

3. Add 1.25 cups fat-free half and half and garlic. Season with salt, black pepper, and cayenne pepper to taste. Bring to a simmer.

4. Meanwhile, cook penne according to package instructions. Drain.

5. Add pasta back to pot and pour in cream sauce. Over medium-low heat, add spinach and 1 tbsp balsamic vinegar. Stir to wilt spinach and serve immediately.
