3 frozen chicken breasts, 1/2 onion, 1 large tomato, 1 small bag frozen green beans, 1 small bag frozen corn, 1 larg(er) can mexican choppen green chilis, juice from 1 lime, 1 container chicken broth, water to fill.
thaw chicken breasts, cut into 1" or smaller chunks. toss with olive oil and chili lime marinade, or create your own. cook until done, squeezing lime juice periodically over chicken as it cooks. (I like to brown mine a little and tear into even smaller pieces as it cooks). Add onion toward end and then chopped tomato and chicken broth. simmer for a few minutes and add frozen corn, green beans and chopped green chilis. I turn the heat down and simmer for over an hour to mix flavors together, but it tastes good simmered just to heat and cook ingredients through, as well. PERFECT low card, high taste soup. You can add ingredients to it like rice or barley if low carb isn't an issue.
