"All In" Meatless Mincemeat

Ingredients
3 large apples, diced1 1/2 cups finely shredded carrot1 medium beet, shredded18 oz tomatoes (preferably green), choppedjuice and zest of one orange juice and zest of one lemon1 cup fresh (or frozen) cranberries3/4 cup Demerara sugar1 tsp stevia extract powder1/4 cup honey1/4 cup molasses1 1/3 cups raisins4 oz dried apricots, diced12 prunes, chopped3/4 cup diced dates1/2 cup dried cranberries1/2 cup currants2 tbsp red wine vinegar1/2 tsp salt1/2 tbsp allspice1/4 tsp cayenne1 tsp nutmeg1 tbsp cinnamon1 tbsp fresh-grated ginger ---1/3 cup rum1/4 cup amaretto liqueur4 oz mixed nuts, chopped
Directions
Combine all ingredients except the rum, amaretto and nuts in a large pot. Cover, and cook over low heat for 3 hours.
Stir in the rum, amaretto and nuts, re-cover and cook over low heat 30 minutes.
Ladle into sterilized jars, leaving 1/2" space.
Process for 20 minutes in a water-bath canner. Alternatively freeze up to 1 year.
