Thai Style Cabbage Wraps

Ingredients
Wraps: 8-10 whole cabbage leaves1 lb. lean ground grass fed beef1/2 red onion, sliced1 red bell pepper cut into strips1.5 oz peanuts (crushed)Fresh cilantro (optional)Diced cucumber (optional)Sauce: 1/4 c. soy sauce or tamari2 tblsp. honey1 tsp. grated ginger (or ground ginger if you can't get fresh)2 cloves of garlic (minced)1 serrano chile, chopped fine2 tblsp. orange juicejuice of 1/2 a lime (~1 1/2 tblsp.)
Directions
Begin by trimming the stem off of a head of cabbage and carefully tearing off whole leaves.

In a skillet, heat a bit of sesame or peanut oil and then brown the ground beef, seasoning with salt and pepper to taste, then add the sliced peppers and onions. Reduce heat to medium and cook until tender while you mix up the sauce.

In a bowl, combine the sauce ingredients and mix well, then add to the meat mixture along with the crushed peanuts. Mix until well combined, simmer for 5 minutes to get the flavors blended, then serve by scooping meat into a cabbage leaf and topping with fresh cilantro and / or diced cucumber

    My family loved this dish.....I cooked the cabbage (the recipe didn't specify if it was to be cooked or not) and added shredded cabbage to the meat mixture right before adding the sauce. BTW I used ground turkey (I had it on hand). So yummy!!!!!! - 1/3/15
