Curried Quinoa

Ingredients
1 cup rinsed Quinoa1 can of diced tomatoes2 cups of chicken broth or bullion3 cloves garlic, minced1 medium onion, diced1 to 1.5 tbs curry powder2 tsp cayenne pepper1 tsp turmeric1 tsp ginger 2 tsp cinnamon1 tbs brown sugar
Directions
Saute garlic in olive oil until fragrant, and add onion and cook for about 5 minutes. Add rinsed quinoa and toast for another 3-5 minutes. Add 2 cups of chicken broth, can of diced tomatoes, and all of your dry ingredients. Stir and bring to a boil, then reduce to a simmer, cover and cook for 25-30 minutes until most of the water is absorbed.
