Chicken Breast, no skin, 0.5 breast, bone and skin removed Garlic, 3 cloveGinger, ground, 1 tsp *Corn Oil, 1 tbsp White Rice, short grain, 1.5 cup *Fish Sauce, 3 tbsp Salt, .25 tsp Pepper, black, .5 tsp Water, tap, 5 cup (8 fl oz)
A BIG POT, HEAT OIL. ADD GINGER AND GARLIC UNTIL SLIGHTLY BROWN. ADD CHICKEN PIECES FISH SAUCE AND PEPPER. STIR, COVER AND SIMMER FOR ABOUT 5 MINS. ADD RICE AND WATER. STIR, COVER AND COOK IN MEDIUM HEAT. CONSTANTLY CHECK AND STIR TO AVOID BURNING THE BOTTOM PART OF THE POT. COOKING TAKES ABOUT 45 MINS. OR WHEN THE RICE TURNS VERY SOFT AND BREAKS. (OVERCOOKED THAN NORMALLY COOKED RICE). TASTE IF NEEDED MORE SALT JUST BEFORE TURNING OFF THE HEAT ADD GREEN ONIONS. SERVE WHILE HOT WITH YOUR FAVORITE BREAD OR ROLL. GOOD DURING WINTER TIME OR IF YOU HAVE COLD OR FLU. You can also top your soup with green onions and include hardboiled egg.
