Zucchini Pancake

Ingredients
2 cups shredded zucchini4 eggs3/4 cups flour1/2 teaspoon salt1/2 teaspoon splenda4 teaspoon baking soda
Directions
Blend zucchini and eggs well. Add remaining ingredients.

Blend well.

Cook on hot skillet 2 tablespoons makes one pancake.

    I think the calorie count is off on this recipe. Flour and whole eggs would definitely raise the calorie count to more than 2.4 calories per pancake. - 7/31/13
