Incredible HEALTHY Pancakes

Ingredients
1 Cup Whole Wheat Pastry Flour1/2 Tsp Baking Soda1 Tsp Baking Powder1 large Egg1 Cup Soy Milk (plain)1/2 Cup Plain Lo-fat Yogurt
Directions
Sift together Flour, Baking Soda, Baking Powder.

In a separate bowl, whisk together, Egg, Soy Milk, and Yogurt.

Pour into dry flour mix and stir until blended.

Fry on a hot griddle sprayed with a bit of Spam... or use a Teflon griddle.

Makes 3 good sized servings. You can cook them all and save the other servings in fridge. Re-heat in microwave.

    I love these waffles:) I use wholegrain spelt flour though- since it is a original grain from the Roman times and not a cross-breed version of wheat that whole wheat flours are today- easier on the digestive track and higher in protein. These have become my morning staple. I make a batch weekly!! - 5/6/12
