* Olive Oil, 1 1tsp * Lemon Juice, 0.25 lemon yields * Green Peppers (bell peppers), 0.5 cup, chopped * Peppers, sweet, red, raw, sliced, 0.5 cup * Yellow Peppers (bell peppers), 0.5 pepper, large (3-3/4" long, 3" dia) * Chick Peas, 0.5 cup * Orange bell pepper 1/2 cup * Fresh Ground black pepper (to taste) * Salt (to taste)
) Soak dry chick peas for six hours, cook in pressure cooker with some salt. Drain all the water out. Let cool. (You may also use canned chick peas.).
2) All peppers (yellow, orange, red, green) should be diced.
3) Add lemon or lime juice, olive oil, ground black pepper and salt (as per individual taste).
4) Mix all ingredients well.
5) Cool in refrigerator and serve cold.
