Peperonata with Capers & Black Olives

Ingredients
1 onion, sliced2 yellow peppers, sliced2 red peppers, slicedblack pepper to tast2 oz. capers2 oz. kalamata olives3 oz. cherry tomatoes1/4 C extra virgin olive oilchopped chives, optionalparsley, optional
Directions
Saute onions with extra virgin olive oil. After a couple of minutes, add peppers and stir fry until soft, about 10 minutes. Add capers, black olives and cherry tomatoes. Season to taste.

Cook fish or meat and garnish with peperonata, chopped chives or parsley optional.

*To lower fat content, cut back olive oil to 1 or 2 tbsp. (not in nutritional info)
