Whole wheat pancakes with flaxseed

1 cup whole wheat flour2Tbsp ground flax seed1Tbsp brown sugar1 tsp baking powder1/2 tsp salt1/4 tsp baking soda1 1/4 cup sour skim2 egg whites2 Tbsp on unsweetened applesauceOptional 1/2 cup of diced honey crisp apple2 Tbsp chopped walnutsPowered sugarMaple syrup
Sift together flour, flax seed, brown sugar, baking powder, salt and baking soda. Prepare sour skim milk by combing skim milk with 1 1/4 tsp lemon juice and let sei for 15 minutes then add eggs whites and apple sauce into sour milk and mixed gently. Add milk mixture into dry ingredients and mix until just blended. Let set for 5 minutes.
Pour onto hot lightly buttered non stick griddle making 4 inch diameter size pancake. Add pieces of apple and walnuts here if using. Depending on heat of your griddle. About 1 1/2 minutes each side. Sprinkle with powered surgar and pure maple syrup for an added treat.
Serving Size: Makes about 12 4 inch diameter pancakes
