2 medium eggsc.50g soft goat's cheese4 - 6 medium mushroomsFresh chives, choppedFreshly ground black pepperGround ginger, optionalCayenne pepper, optional
Chop mushrooms an mix and sauté over a medium heat in butter or oil (or spray of oil). Add beaten eggs and stir through vigorously so that they scramble. Chop and add chives, grind black pepper over the mix and other spices if desired. Take off the heat and stir in the goat's cheese. Serve, either as is or on a piece of wholemeal toast.
