1.5 Pounds of red potatoes1 Yellow bell pepper1/4 white onion1.5 cups of egg beaters1 jalapeno pepper1 t salt1 t cumin.25 cups of veggie shreds
Put all veggies, cumin, salt in pan and cook about 10 mins until potatoes are tender
Pour egg beaters and cook on stove top for 5 minutes
Put in oven for the rest of the 15 minutes or until solid
Serve and Be Happy!
