Mashed Yam with Dried Cranberries

Ingredients
Makes 6 - 8 generous servings4 cups yams (peeled & cubed)2 tbsp chopped fresh ginger3 tbsp melted butter1/4 cup Rice Dream soy milk1/4 tsp gresh grated nutmeg1/2 cup dried cranberriesSalt and white pepper to tasteChopped fresh parsley
Directions
Makes 6 - 8 generous servings

Place the yams and ginger in a pot, cover with cold water and boil until the yams are tender. Drain well and then thorougly mash the yams. Beat in the butter and milk. Mix in the nutmeg, cranberries, salt and pepper. Spoon into a serving dish. Sprinkle with parsley and serve.
