Beer Cheese Soup

1/2 cup butter--1 cube1 onion, chopped2 stalks celery, chopped or slices2 large carrots chopped or sliced1/2 cup flour1/2 teaspoon dry mustard3 cans non-fat chicken broth 14 oz each6-8 ounces cheddar cheese, grated1 bottle beer, 12 oz2 -4 Tablespoons Parmesan cheese, gratedSalt and pepper to taste
Melt butter in large kettle. Saute chopped onion, chopped celery and chopped carrots until translucent and soft--10 minutes or so. Stir in flour and dry mustard and saute 5 more minutes. Add broth and simmer for 10 minutes. Add beer, cheeses and salt and pepper to tast and simmer 10 minutes more. Servie with a large tossed salad.
Soup is even better the next day.
