6 T rice wine vinegar3 T sesame oil5 T reduced fat creamy peanut butter3 T soy sauce3 T brown sugar1 T minced ginger root1 t. minced garlic10 c shredded cabbage (green, red and/or napa)1 red bell pepper sliced into 1" pieces2 carrots sliced into 1" pieces6 green onions, chopped.5 c slivered almonds
Combine all dressing ingredients. In a separate bowl, combine the cabbage and vegetables. Just before serving, pour the dressing over the vegetable mixture, then stir in the almonds.
