Chicken and Black Bean Enchiladas

Ingredients
2 Chicken breast, cooked and chopped1 can black beans rinsed and drained1 can corn, drained2-3 scallions, sliced1 tsp. dried cilantro1 1/2 cup grated cheddar cheese1 lg can green or red enchilada sauce8-10 flour tortillas
Directions
Mix chicken, beans, corn, onions, cilantro and 1/2 cup of grated cheese to make the filling (it will seen dry, but the finish product won't be because of all the enchilada sauce). Spread a little enchilada sauce on the bottom of a 9x13 pan. Put some filling down the center of each tortilla and roll up, then place in pan. Top with remaining enchilada sauce and cheese. Bake covered at 350 degrees for about 30 minutes. Can remove cover the last 5 minutes to brown, if necessary. Serve with lettuce, olives and sour cream.
