Roasted Almonds

Ingredients
1 egg white0.5 tsp cold water0.25 c white sugar0.25 c brown sugar, packed0.25 tsp salt1 tsp cinnamon1 tsp vanilla extract20 oz almonds, raw
Directions
Beat egg white and water until foamy. Add sugars, salt, cinnamon and vanilla. Stir in the almonds.

Spray a large cookie sheet with Pam. Pour nuts into a thin layer. Roast at 250 degrees, stirring every 15-20 minutes until dry. (I test one at room temperature after 1 hour of bake time to check for doneness.)
