Garlic Chive Smashed Potatoes

9 Medium/Large Kroger Potatoes3 Tbsp Country Crock, Light Spread 5 Tbsp Fresh Chives3 Cloves Chopped Garlic3 Tbsp Garlic Powder2 Tbsp Onion Powder3 Tbsp Pompeian Extra Virgin Olive Oil, First Cold PressDash Salt and Pepper`````````````````````Others You May Need:Sauce Pot for Boiling PotatoesMeasuring SpoonsFork (for testing "doneness" of potato)Whisk (Or another fork)Coffee CupPotato Smasher
Prepare Potatoes by Washing Thoroughly, Cutting Off All Brown Spots.
1. Bring 3 Quarts of Water to a Boil. Add Dash of Salt to Speed Boiling process.
2. Add Raw, Washing Potatoes, and boil for about 20 minutes on medium-high heat.
3. While Potatoes Boil, Prepare the Garlic Butter Sauce.
4. In a Coffee Cup add together: Olive Oil, Butter Spread, Garlic Powder, Onion Powder, and a Dash of Pepper.
5. With a fork, mix all ingredients thoroughly. Consistency should be like warm syrup. Smell it, you know it's going ot be good. SET ASIDE.
**If the butter is too cold and wont mix well, then pop the coffee mug into the microwave for about 15 seconds. That will help the consistency**
6. Check your potatoes for "doneness" by pricking the top and bottom potatoes with a fork. If done, remove from heat, rinse, and place back on the stove.
**If Potatoes Aren't Done After 20 Minutes, Cook about 10 Minutes Longer**
7. Turn Stove Top to Low Heat and Add 25% of the Garlic Butter Mix.
8. Gently Smash Potatoes with Potato Smasher.
When 70% Smashed, Switch from Potato Smasher to Rubber Spatula.
9. Fold the rest of the Garlic Butter mixture into smashed potatoes with spatula.
SERVE!!
