Slow-cooked Pork with Butternut Squash & Apples

1 lb. Pork Tenderloin, cut into 1-inch pieces2 T. olive oilKosher salt and freshly ground pepper to taste1/2 cup water1 butternut squash (about 2 cups), cut into 1 inch pieces2 large apples (about 2 cups), pared, peeled, cut into 3/4 in pieces 3 T. brown sugar1 t. cinnamon*Craisins to taste (I use about 1/6 cup) - optional
Coat pork pieces with flour. Brown in the slow cooker with olive oil). Add water and salt and pepper. Cook on low for 4 hours.
Add squash, apples, onion, brown sugar and cinnamon. Stir to combine. Cook 2 hours. Add more salt & pepper to taste. Stir in craisins. Serve over brown rice.
Butternut squash can be difficult to chop, Cut in half lengthwise and remove seeds, Cut each half into half lengthwise, then cut across in 1 inch strips, the cut into chunks. OR buy a pound of pre-cut squash!
Serving Size: makes about 4 1.5- cup servings
