Relish French Onion Soup

2 cans beef consomme8 oz. apple juice or apple cider3 med. onions, sliced2-3 Tbsp. olive oil1 lb. stew beefFrench bread, sliced thickly Swiss cheese, sliced1-2 bay leaves
Toss sliced onions in olive oil and place in crockpot. Add bay leaf and top with stew beef. Cook on low for 8 hours or 'til beef is tender and falls apart.
Add consommé and apple juice or cider and turn crockpot to high heat. When soup is hot, ladle into bowls and top with french bread and two slices of swiss cheese. Place bowls in toaster oven or conventional oven and broil until cheese just begins to brown.
Serving Size: makes 4 1.5-cup servings
