6 lbs chicken breast, boneless, skinless, halved2 16oz can pineapple slices, drained2 15 oz cans manderin oranges, drained4 tbsp cornstarch4 tbsp brown sugar, packed4 tbsp lemon juice1/2 tsp salt1/2 tsp ground ginger
Combine all ingredients in the crock pot. Stir Well. Cover and cook on low for 6 to 8 hours or on high for 3 hours. Makes 16 servings.

We'll be putting this in our chicken rotation. It was very good. I halved the ingredients and may just eyeballed the ginger - I may have put a tad too much in. I also only put one tablespoon of cornstarch and then I dredged the chicken in flour seasoned with Emeril spice - slight kick. - 1/9/09

We love chicken, and I wanted to mix it up! This recipe was fantastic and light. I used 1 tbsp of cornstarch, left out the oranges, added light soy sauce, added chopped fresh red pepper and fresh snow peas, and topped it on rice! My family loved it and we will use it regularly!
