Curried Lentil Soup, Flaxmilk version

Ingredients
1 cup brown lentils1 cup red lentils2 cups vegetable broth7 cups water1 cup flaxmilk1/2 cup short grain brown rice1 Cup chopped celery1 onion4 cloves garlic1/2 Tbsp Olive oil2 Tbsp. bakers coconut1 1/2 tsp salt4 Tbsp yellow curry powder1Tbsp red curry powderdash of onion powderdash of garlic powder
Directions
Chop Onion, carrot, and celery, mince garlic, saute in bottom of pan with the olive oil until onion is caramelized.

Add the rest of the ingredients Bring to a boil and simmer for 50-60 minutes, or until brown lentils are soft and red lentils have dissolved into the broth.

Serving Size: Makes Thirteen 1 cup servings
