* Onions, raw, 2 medium * Chicken Broth, 4 cup (8 fl oz) * Butter, unsalted, 2 tbsp * Half and Half Cream, .25 cup * Bay Leaf, 100 grams Water, tap, 2 cup (8 fl oz) White Wine, 3 fl oz
Melt butter in pot. Add onions and bay leaf. Cook sliced onions on medium to low heat for 20-30 minutes or until softened. Do not allow the onions to brown. Add 1/4 cup white wine (I used chardonnay) or vermouth to onions. Bring to a boil and then turn down heat and simmer for five minutes. Add water and chicken broth. Allow to cool if you are going to use a food processor to blend up onion mixture. Otherwise, remain warm on the stove if using a handheld blender. Add the cream at the end. Add salt and pepper if desired. Enjoy!
